Mums Aubergine Aka Eggplant Casserole

My partner loves Aubergine so having trawled through loads of recipes I decided to wing it with my own.
Ingredients:
1 aubergine, diced
1 courgette, diced
1 onion, diced
100 g mushrooms, chopped
spinach, chopped
1 garlic clove, crushed
1 teaspoon oregano
2 teaspoons basil
2 teaspoons no salt bouillon
2 (400 g) cans tomatoes
125 g mozzarella cheese, sliced
15 g grated parmesan cheese
Directions:
1. Fry the Aubergine, onion, courgette, mushrooms and garlic for 10minutes, then place in ovenproof dish.
2. Add the tomatoes, spinach, oregano, 1tsp of Basil and bouillon.
3. Place the mozerella slices on the top, sprinkle on 1 tsp of basil and the parmesan, cook in the oven on Gas Mark 6, 200 Celsius, 400Fahrenheit for 20 minutes or till the cheese is golden.
