Multigrain Pancakes

For use with MultiGrain Baking Mix (Recipezaar #217642)
Ingredients:
2 cups multi-grain baking mix (recipezaar multigrain baking mix)
1 cup milk or 1 cup water
1 egg
1 cup fresh cranberries or 1 cup frozen cranberries
1 tablespoon vegetable oil
1/2 cup pure maple syrup, warmed for serving (optional)
sliced fresh fruit (optional)
Directions:
1. In a medium sized mixing bowl, stir together the MultiGrain Baking Mix, milk and eggs until dry ingredients are moistened.
2. Let rest for 5 minutes.
3. Stir in cranberries , if desired (could also use blueberries!).
4. Meanwhile, heat a large heavy skillet; film the bottom with a little oil or non-stick spray.
5. For each pancake, ladle about 1/3 cup batter into the skillet. Cook until surface appears dry and small bubbles appear at the edges.
6. Turn over and cook second side for about 30 seconds.
7. Repeat with remaining batter. Serve pancakes hot, accompanied by warm maple syrup and sliced fresh fruit if desired.
