Ingredients:
1 tsp olive oil
145 g onion
90 g carrot
215 g leeks
5 cloves garlic
1 tsp grated ginger
350 g (450 g raw) chicken breast
4 cups chicken broth
1 tsp sriracha
2 tsp curry powder
350 g granny smith apple
2 tbsp lemon juice
100 g coconut milk
Directions:
1. Heat oil, cook chicken for 5 min until golden. Remove chicken from pot, add leeks, onions, garlic, carrot and ginger. Cook for 5 min, add chicken back. Add broth, lemon juice, and curry and simmer for 30 min. Add apples, coconut milk, Sriracha. Serve over rice
