Ingredients:

Directions:

  1. Prep time does not include making the olive sald and chilling or roasting the veges etc
  2. Vegetrarian, may be raosted ahead of time
  3. Slice vegetables and oven roast or grill by your favorite method- I brush mine with olive oil and season to taste
  4. Veges may make enough two sandwiches
  5. Set aside to cool
  6. Cut bread in half and scoop out soft bread from top and bottom and leave a hollow ( save this for bread crumbs etc )
  7. Spread half the olive salad on the bottom pieces.
  8. Top with veges, sliced cheese if using and the remainder of the olive salad
  9. Place top bread on
  10. Do the same method for the meat and cheese version
  11. Wrap in plastic and let everything mellow at least three hours before serving
  12. Remove from fridge and let come to room temp
  13. Note: sandwiches may be prepared a day in advance
  14. Olive salad: Beast prepared a day ahead of time
  15. Rough chop olives , garlic, parsley in a food processer
  16. Add the olive oil, oregano and seasoning to taste
  17. I usaully cut sandwhiches into 8 pieces since I serve it with Cajun Potato salad and other stuff
