A delicious mix of grains, fruits and spices. Can be eaten as a cereal or mixed into yogurt.
Ingredients:
1 cup (500g) orlled oats
1 cup bran flakes
1 cup hazelnuts, choopped
1/2 cup almonds, chopped
1/4 cup dried coconut
1/2 cupsunflower seeds, shelled
3/4 cup honey
2 tsp cinnamon
1/2 cup prunes, chopped
3/4 cup dried apricots, chopped
1/2 cup raisins
1/2 cup dried currants
1/2 cup veg etable or sunflower oil
Directions:
1. Preheat oven to 375F, 180C, Gas Mark 4 1/2
2. Spread oats, bran flakes, almonds, sunflower seeds and hazlenuts in a large roasting pan and bake for 15minutes, stirring every 5 minutes
3. Add coconut and bake for another 5 minutes
4. Stir
5. Mix honey, oil and cinnamon in a mixing bowl
6. Add to baking mixture and stir well
7. Bake for a further 5 - 10 minutes, stirring once
8. Cool mixture for 15 minutes before adding dried fruit
9. Cool to room temperature
10. Store in an airtight container
