I just made these and they are so yummy! I did only use 1 cup of raisins and added 1/4 cup more of oats. I also used raisinets, instead of plain raisins, Awesome! Try them you won't be disappointed. I am leaving the baking time to the original, but mine baked up perfect in 13 minutes, it might be due to my elevation, I don't know.
Ingredients:
2 1/2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup quick oats
1 cup firmly packed dark brown sugar
1/2 cup granulated sugar
1 cup butter, softened
2 tablespoons honey
2 teaspoons vanilla
2 large eggs
1 1/2 cups raisins
1/2 cup nuts
Directions:
1. Preheat oven to 325°.
2. Whisk flour, soda, salt and oats together.
3. In large mixing bowl blend sugars. Add butter to form a grainy paste.
4. Scrape sides and add honey, vanilla and eggs.
5. Mix at medium speed until light.
6. Add flour mixture, raisins and nuts. Blend together.
7. Drop by rounded tablespoon on ungreased cookie sheets.
8. Bake about 18-20 minutes until they're pale golden.
9. Remove immediately to cool flat surface to cool.
