A summer favorite
Ingredients:
1 cup mozzarella cheese, small cubed
1 1/2 cups tomatoes, cubed
1 1/2 cups cucumbers, sliced &,cubed
1 can chickpeas, rinsed
1 cup olive, chopped
italian dressing, to taste
basil, chopped
1 can black beans, rinsed
Directions:
1. Mix all ingredients and toss well.
2. Refrigerate until serving.
3. Can of black beans is optional and will extend the salad.
