Mozzarella-Pesto Panini

A delicious vegetarian panini; easy and quick to make without sacrificing flavor!
Ingredients:
2 oz bread, italian
2 oz fresh mozzarella
2 tbsp pesto sauce
1 salt, to taste
Directions:
1. Heat up your panini press. If you don't have one, easy! Simply heat up a skillet to about medium heat. Spray a little vegetable cooking spray on each side or just brush some vegetable oil on it.
2. Use good bread, like a nice italian bread or slice a couple slices of a semolina batard.
3. Use about 2 tbsp of pesto sauce and spread one on one side of each slice of bread. I recommend Classico's Pesto with Basil. If you have time on your hands, you can simply make you own with a recipe from !
4. If desired, sprinkle some salt on the pesto.
5. Cut about an ounce of fresh mozzarella. I recommend BelGioioso Cheese, which I buy at BJ's 4 small balls of mutz for $10. Pricey but delicious! For that brand, a good estimation is 2 medium sized slices from one ball. Just rip them apart with your hands after they were sliced and place them on one slice of bread.
6. Sammy them up and place it on a panini press for 2 minutes, give or take. Depending on how thick the bread is and how much mutz used, it could take longer as the cheese might not be fully melted sometimes after 2 minutes.
7. If you're using a skillet, you would place the sammy on the skillet, and use another skillet and a weight to put on top of the sammy. Make sure the other skillet is clean! keep that pressed for 1-2 minutes, then flip to the other side and do it again!
8. You can add anything to this panini really. Tomatoes are especially delicious, but anything goes here!
