Ingredients:

  • 2 large eggs
  • 1/2 cup 1% low-fat milk
  • 4 slices bread, crumbled
  • 2 1/2 lbs ground beef
  • 1 large onion, minced
  • 3/4 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup minced celery
  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 3 slices american cheese
  • 1/4 tsp dry mustard

Directions:

  1. Preheat oven to 350 degrees.
  2. Line roasting pan with aluminum foil; set aside.
  3. In large bowl whisk eggs with 1 teaspoons.
  4. Mustard, 3/4 teaspoons.
  5. Salt and 1/4 teaspoons.
  6. Pepper until blended.
  7. Stir in milk and bread crumbs.
  8. Let stand 5 minutes.
  9. Add ground beef, onion, celery, and parsley.
  10. With hands, mix lightly until well blended.
  11. Turn meat into prepared pan.
  12. Moisten hands with water, shape into 8x5 inch loaf.
  13. Bake 1 hour and 15 minutes.
  14. In small bowl mix glaze ingredients until blended.
  15. Spread over top of meat loaf.
  16. Bake 15 minutes longer.
  17. Cut cheese in half crosswise into triangle.
  18. Arrange over top of glaze.
  19. Serve with roasted potatoes.
