MOUTH WATERING HARVEST SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Nichols Estate in Irving, Texas in 1994. This is one that I have made on several occasions and there are never any leftovers.
Ingredients:
1/2 cup raisins
boiling water as needed
1 cup halved large seedless grapes
1 tablespoon diced dried apricots
1-1/2 tablespoons fresh rosemary
1/4 large red onion cut small slivers
juice of 1 fresh lemon
5 tablespoons extra virgin olive oil
1 teaspoon salt
2 teaspoons freshly ground black pepper
5 cups romaine chopped
2 cups baby spinach
1 tablespoon pine nuts toasted
Directions:
1. Put raisins in small bowl and pour boiling water over them to cover.
2. Let stand until plump and soft about 10 minutes then drain.
3. Put raisins, grapes, apricots, rosemary and onion in a large bowl.
4. Add lemon juice and stir in the olive oil then season with salt and pepper.
5. Tear romaine and spinach into bite size pieces and put in large bowl.
6. Add dried fruit mixture and mix well then scatter pine nuts over top.
