Mother's Spaghetti Sauce

Okay, not my mother's but my friend Natalie's mother's sauce. This recipe was given to me at my cooking themed bridal shower years ago. I got a lot of really cool kitchen gadgets but more importantly everyone brought me a family recipe to treasure! Adjust water if necessary.
Ingredients:
4 tablespoons olive oil
1 cup onion, chopped
2 garlic cloves, minced
1 lb ground beef
1 cup sliced mushrooms
4 cups italian plum tomatoes, chopped
12 ounces tomato paste
3 cups water
2 teaspoons salt
1/2 teaspoon pepper
1/4 teaspoon sugar
1 teaspoon oregano
1 bay leaf
1/2 teaspoon italian seasoning
Directions:
1. Heat oil in a pan and sauté the onion and garlic until golden brown.
2. Add the beef and cook until the meat looses it's red color.
3. Add mushrooms and cook 3 minutes longer, stirring occasionally.
4. Add tomatoes, tomato paste, water, salt, pepper, sugar, oregano, bay leaf, and Italian seasoning.
5. Simmer uncovered for about 2 hours, stirring occasionally.
