This came from a mushroom side-dish recipe I found online. I added potatoes and ginger sauce to give it a little more zest. The zucchini was a personal flair that is entirely optional. Carrots work just fine too. Read more . As an additional alternative, if you are not vegetarian, this works well with some chopped up beef thrown in.
Ingredients:
*all amounts are adjustable; you can use as much or as little of anything as you like.
12 oz mushrooms of your choice
1 regular potato, chopped
4 tbsp ginger sauce
4 green onions, sliced
4 tsp spices--i use italian blend but parsley or oregano work too
4 cloves garlic, minced
2/3 zucchini, chopped (optional)
1/2 cup olive oil (you can use more or less if you want)
salt
pepper
Directions:
1. In a frying pan, saute potatoes and half the spices in half the olive oil for about 5 minutes
2. Add mushrooms, garlic, onions, and remainder of spices and continue cooking for another ten minutes or until mushrooms are mostly cooked
3. Add zucchini and ginger sauce and saute until everything is fully done to your liking (usually about 5 minutes)
4. Salt and pepper to taste
