Ingredients:
olive oil
2-lg whole(s) onions diced
2-lg tablespoon(s) garlic minced
2 cup(s) celery diced
2 cup(s) carrots diced
2 cup(s) mushrooms sliced
2 cup(s) zucchini diced
2 box(es) frozen spinach chopped
3 pound(s) ground chuck
3 pound(s) italian sausage bulk
salt
pepper
italian seasoning
oregano
basil
parsley
rosemary
thyme
marjoram
sugar
bay leaf
2-lg can(s) tomatoe paste
4-lg can(s) tomatoes diced
4-lg can(s) tomatoe sauce
5 package(s) mozzarella cheese shreaded
Directions:
1. Vegetable mixture:
2. In a large stock pot, add olive oil to cover bottom of pot
3. Add onions, celery, carrots, garlic, mushrooms & zucchini
4. Add salt, pepper, basil, oregano, marjoram, rosemary, thyme, parsley & sugar to taste
5. Saute until vegetables are soft
6. Meat mixture:
7. In a large saute pan, add ground chuck & Italian sausage
8. Add salt, pepper, basil, oregano, marjoram, rosemary, thyme, parsley, sugar to taste
9. Cook until meat is brown
10. Add tomato paste and stir throughly
11. Combine both vegetable & meat mixture in stock pot
12. Defrost chopped spinach in microwave, & add
13. Add diced tomatoes, tomato sauce & bay leaves
14. Taste & add additional seasonings if needed
15. Simmer for 3 hours, stirring occasionally
