Morrocan Tomato and Lentil Soup (Green Party of Aotearoa New Zealand)

Really filling soup, half serves for entree or full serve for a main course. Tastes like it has meat in it but is vegan!
Ingredients:
1 onion
2 chillies, green or red
2 tsp salt
1 tsp pepper
2 cloves garlic
1 1/2 cups red lentils
400 g tomatoes, chopped (1 tin)
2 tbsp tomato paste
4 cups water (or more)
1/4 cup olive oil
3 tbs lemon juice
Directions:
1. Cube onions and saute with crushed garlic and finely chopped chillies until onions are clear.
2. Add lentils and fry for about a minute.
3. Add tin of tomatoes, 2 cups of water and salt and pepper.
4. Boil/simmer for one to three hours, topping up with water as it evaporates (the longer you cook the yummier it is!).
5. Add tomato paste near the end to bring back colour, and then the olive oil.
6. Squeeze lemon wedges into individual servings.
