Moroccan-Style Quinoa Salad with Figs

Ingredients:

Directions:

  1. Bring quinoa, stock & water to boil in medium pan on high heat. Reduce heat to low, cover and simmer until tender but still firm, about 15 minutes.
  2. Remove from heat & let sit covered, 5 minutes.
  3. Put quinoa in a large bowl with chopped apricots & dates, yellow pepper (diced), pine nuts (toasted).
  4. Heat oil in medium skillet on medium. Add in onion, sautee on medium heat for 5-10 minutes, until onion browns. Add in garlic, sautee one more minute.
  5. Remove from heat and add in vinegar, apple juice, cumin, cinnamon, mustard seeds, coriander seeds and sage.
  6. Toss quinoa mixture with oil, spice and garlic mixture.
  7. Serve at room temperature.
