My Great Friend Elaine introduced me to this wonderful refreshing dish. Can be used as an entire meal or side dish salad. Just wonderful!
Ingredients:
1 cup quinoa
1 cup chopped cucumber
1 chopped roma tomato
1/2 cup chopped sun dried tomato's
3/4 cup chopped fresh parsley
1 small chopped red pepper
1/4-1/2 cup chopped purple onion
1 cup feta crumbled
1/2 cup rasions or cranberries
1/4 chopped celery
3/4 cup chopped black olives
juice from 1 lemon
1/4 cup virgin olive oil
Directions:
1. Cook Quinoa 1 cup to 2 cups water. Boil reduce and simmer 12-15 min till done. cool
2. add remaining ingredients toss and enjoy with roasted pecans
