Moroccan Potato Salad

Delicious, non mayonnaise potato salad infused with lemon, garlic, olive oil and spices. Serve warm or room temperature. Really tasty!
Ingredients:
4-6 medium potatoes ( i like red or yukon gold )
1 bunch of green onions- (chop green parts only )
3 tbs fresh chopped parsley
4-6 olives ( green and dark ) chopped
1 large garlic clove minced
juice from 1 large fresh lemon
1/4 cup extra virgin olive oil or more if needed
salt to taste
1 tsp ras el hanout -spice blend- see my separate post on group recipes or 1 tsp. za'atar spice- also see group recipes for that
Directions:
1. In a bowl add the olive oil, parsley, lemon juice, spices, garlic, olives and salt and pepper
2. Stir to blend
3. Cook potatoes by favorite method
4. While warm enough to handle, remove skins from potatoes
5. Coarse chop potatoes
6. Combine with oil mixture in bowl.
7. Add more olive oil if needed as warm potatoes will soak up the oil.
8. Serve warm or at room temperature.
