Moroccan Mushrooms

A quick and easy Moroccan veggie meal. Perfect served with couscous.
Ingredients:
2 tablespoons vegetable oil
1 red onion, sliced
1 lb mushroom
1 (14 ounce) can garbanzo beans, drained
1 (14 ounce) can chopped tomatoes
3 tablespoons harissa
1 lemon, grated zest and juice
3 tablespoons parsley, chopped
Directions:
1. Heat the oil in a large frying pan, add the onion and sauté over a medium heat for 4mins.
2. Add the mushrooms and sauté for a further 5mins until the mushrooms are browned.
3. Stir in the garbanzos, tomatoes, harissa paste and lemon juice. Bring to the boil, cover and simmer for 8mins. Remove the lid and season to taste.
4. Mix the lemon zest and parsley together.
5. Serve the mushrooms with couscous and a scattering of the lemon and parsley.
