Moroccan Couscous Salad

a wonderful combo of flavors!
Ingredients:
1 cup couscous
1/2 cup dried cherries
1 cup boiling water
5 tbs olive oil divided
1 large orange bell pepper cut into bite size piece
1 large onion halved and then sliced thin
1 1/2 tsp ground cumin
1/2 tsp ground ginger
1/4 tsp cinnamon
salt and pepper
1, 16 oz can chickpeas drained
1/4 cup fresh chopped cilantro
3 tbs rice wine vinegar
3 tbs frozen ojrange concentrate thawed
Directions:
1. Place couscous and cherries in a bowl.
2. Cover with boiling water,
3. Cover bowl with plastic wrap.
4. let sit 5 minutes or water completely absorbed.
5. Meanwhile heat 2 Tbs oil in skillet and saute peppers and onions crisp tender.
6. Add seasoning and spices as they cook.
7. Add to couscous along with remaining 3 tbs of oil, vinegar and o.j.
8. Toss to coat
9. Cover and chill tell serving time
