Moroccan Carrot Soup

Ingredients:

Directions:

  1. Melt butter in large saucepan over medium heat.
  2. Add oinion;saute 2 minuites.
  3. Mix in carrots.
  4. Reduce heat,cover and simmer until carrots are very tender,about 20 minuites.
  5. Stir cumin seed in small skillet over medium-high heat until fragrent about 4-5 minuites.
  6. Cool seeds & finly grind in spice mill.
  7. Remove soup from heat.
  8. Puree in batches until smooth.
  9. Return to same pan.
  10. Wisk in honey lemon juice & allspice.
  11. Season with salt & pepper to taste.
  12. Ladle soup into bowls drizzle yogurt over soup;sprinkle generously with cumin.
