Ingredients:
2 tablespoons olive oil
2 garlic cloves, minced
3 tablespoons freshly squeezed lemon juice
15 sprigs fresh parsley
1 teaspoon sweet hungarian paprika
1/2 teaspoon ground cumin
1/2 teaspoon salt
5 large carrots
1/4 cup dried currants
Directions:

2. In a food processor, blend the oil, lemon juice, cilantro, paprika, cumin, and salt until smooth. Pour dressing into a large bowl or large storage container.
3. Add the carrots to the processor and pulse until finely chopped. (You should have about 4 cups.) Toss the carrots and currants in the dressing until well coated. Serve immediately, or cover and refrigerate for up to 3 days.
