Ingredients:
1 lb carrot
1/2 cup parsley, chopped
2 garlic cloves, crushed
1/4 cup lemon juice
1/4 cup vegetable oil
1/2 teaspoon cumin
1 teaspoon paprika
1 dash red pepper flakes
Directions:
1. Cook carrots whole until they are al dente, still crisp.
2. Slice carrots, then combine them with remaining ingredients.
3. Serve at room temperature.
