These are health packed full of veggies, nuts and fruits...
Ingredients:
2 cups all purpose flour
1 1/4 cups sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
1/2 teaspoons salt
2 cups grated carrots
1/2 cup raisins
1/2 cup shredded coconut
1/2 cup pecans
3 eggs
1 cup canola
1 medium tart apple, peeled and shredded
2 teaspoons vanilla extract
Directions:
1. In a large bowl. combine first 5 ingredients.
2. Stir in next 4 ingredients.
3. Combine next 4 ingredients; stir into dry ingredients just until moistened.
4. Spoon into greased pr paper lined mufin cups.
5. Bake at 350 degrees for 15 to 18 minutes
6. Yield: about 18 muffins..
