Ingredients:
1 cup sugar
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/4 teaspoon salt
3 large eggs, beaten
2/3 cup vegetable oil
2 tablespoons vanilla
2 cups carrots, grated
1 large apple, grated
1/2 cup flaked coconut
1/2 cup raisins
1/2 cup chopped walnuts or 1/2 cup pecans
Directions:
1. Sift sugar, flour, baking soda, cinnamon, and salt together; set aside.
2. Combine eggs, oil, and vanilla in a bowl; mix well.
3. Stir in carrots, apple, coconut, raisins, and nuts; add dry ingredients and mic well.
4. Spoon into greased muffin pans.
5. Bake at 350 degrees for 22-27 minutes.
