Mooshy Pumpkin Bars

These pumpkin bars are more of a snack than a dessert, and filled with tons of pumpkin that melts in your mouth.
Ingredients:
2 eggs
1/2 cup brown sugar
1/2 cup olive oil
1/2 cup water
1/2 pumpkin (cooked and mashed) or 1/2 one can pumpkin
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1 teaspoon nutmeg
2 teaspoons cinnamon
1/2 cup oats
1/2 cup raisins
1/2 cup chopped walnuts
1 dash ground cloves
grated orange peel
Directions:
1. Beat egg, add oil, brown sugar, vanilla and water. Mix thoroughly. Add pumpkin and stir. Then add the flour, baking soda, salt, nutmeg, and cinnamon. Stir in oats and raisins, and nuts if you want them.
2. Cook at 350 for 45 minutes. I recommend using a 9x13 pan but if you want them thicker, use a larger pan, then you will have to cook it for longer but they will still turn out mooshy!
