I have gotten into reading books by Diana Mott Davidson and in one of her books she had a recipe for Montessori Muffins. This is my version of those muffins. I did use 1 teaspoon Baking Spice Blend Mix for the spices but the data base won't take that as a measurement.
Ingredients:
1 cup old-fashioned oatmeal
1 cup whole wheat pastry flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 teaspoon salt
1/2 cup powdered milk
1 cup water
1 egg
1/3 cup molasses
1/4 cup canola oil
1 cup chopped pitted prunes
Directions:
1. Preheat oven to 375 degrees. Spray a 12-cup muffin tin with non-stick cooking spray or oil and lightly flour the muffin tin. Set aside.
2. Place the oatmeal in a blender container and process until a fine flour consistency. Measure the oat flour and whole wheat pastry flour to make 2 cups; add to a large mixing bowl.
3. To the flour mixture add the baking powder, spice mixture and salt. Whisk lightly to combine.
4. In the blender container add 1/2 cup dry milk powder, 1 cup water, egg, molasses and canola oil. Turn on blender and mix thoroughly.
5. Pour the mixture into the mixing bowl with the flour mixture and stir until just combined. Stir in the chopped prunes. Evenly divide the batter into the muffin tins and place in preheated oven. Bake for 15 to 20 minutes or until toothpick inserted off center comes out clean.
6. Allow to stand 5 minutes, remove from baking tin and enjoy.
