These are really good, tastes kind of like chicken. Also good with spaghetti sauce or marinara sauce
Ingredients:
monterrey jack cheese block
cornbread stuffing mix
eggs
oil for frying
Directions:
1. pour about 1 inch oil in frying pan and heat on high.
2. cut jack cheese into slices about 1/4 to 1/2 inch thick. depending on how thick you would like them
3. beat 1 or 2 eggs til mixed well.
4. put stuffing mix in a plastic bag and crush until you have fine crumbs.
5. put eggs in one bowl and crumbs in another.
6. dip cheese slices into eggs then stuffing crumbs and fry in hot oil til light brown or darker if you like.
7. drain cooked slices on mesh screen .they are used to stop oil from splattering but ive found they work great as a drain for fried foods.
8. you can also double dip into eggs and crumbs. and you can also deep fry these if you prefer. this was an experiment that turned out really well. i dont name a brand here but make sure you get a seasoned cornbread stuffing. i dont list servings because it depends on how many slices you wish to make. i usually make about 8 ounces of cheese because i am cooking for one. also you have to watch that the cheese slices dont melt. the longer they stay in the oil obviously they will melt. its harder to get them out of the pan if they melt.
