Monterey Jack and Roasted Red-Pepper Quesadillas

Ingredients:
8 flour tortillas
1/2 cup monterey jack cheese, shredded
84 grams roasted red peppers, chopped
1 cooking spray
Directions:
1. Preheat broiler.
2. Place 4 (6-inch) flour tortillas on a large baking sheet coated with cooking spray then turn over.
3. Sprinkle each tortilla evenly with Monterey Jack cheese and roasted red bell peppers.
4. Top each tortilla with another tortilla; coat tops with cooking spray.
5. Broil 3 minutes or until lightly browned.
6. Carefully turn over.
7. Broil an additional three minutes or until lightly browned. Cut each quesadilla into 4 wedges
