Monte Blanc Warm Green Beans And Walnut Salad

MONTE BLANC WARM GREEN BEANS AND WALNUT SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the McGowan Estate in Sherman, Texas in 1991.
Ingredients:
1/2 pound mixed winter lettuces
12 sprigs fresh chervil
2 tablespoons chopped fresh chives
1 teaspoon salt
1/2 pound green beans trimmed
1/2 cup coarsely chopped walnuts
radishes for garnish
3 tablespoons balsamic vinegar
1-1/2 teaspoons spicy mustard
1 small garlic clove minced or pressed
1/4 teaspoon dried tarragon
1/2 teaspoon salt
1 teaspoon freshly ground black pepper
6 tablespoons olive oil
3 tablespoons walnut oil
Directions:
1. Wash dry and toss together the lettuces, chervil and chives.
2. Stir together the vinegar, mustard, garlic, tarragon, salt and freshly ground pepper.
3. Whisk in oils and mix well.
4. Bring a large pot of water to a rolling boil.
5. Add 1 teaspoon salt and blanch beans for 2 minutes.
6. Drain beans and rinse briefly with cold water then place in a bowl.
7. Just before serving toss lettuce mixture with 1/3 of the dressing.
8. Heat remaining dressing in saucepan then add nuts.
9. Stir together and when nuts are heated through toss with green beans.
10. Place dressed greens on plates and top with warmed dressed beans and walnuts.
11. Garnish with radishes and serve immediately.
