Mom's Zucchini Bread

My mom has been making this bread since I was little. Now her grandkids love to eat it. It's the best warm with butter on it. We like to make more than one loaf and freeze it...since everyone eats it so fast. This recipe makes 2 large loaves or 5 small loaves.
Ingredients:
2 eggs
2 1/4 cups sugar
1 cup oil
2 cups grated zucchini (with the skin left on)
3 cups non-sifted flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon nutmeg
3 teaspoons cinnamon
3 teaspoons vanilla
1 cup chopped walnuts
Directions:
1. Put the first 4 ingredients in a bowl and mix well.
2. Add the next 8 ingredients in the bowl and mix well again.
3. Pour into greased loaf pans.
4. Fill the pans 3/4 of the way full.
5. Bake at 350 degrees for 60 minutes, or until a toothpick comes out clean.
6. **NOTE** when using foil pans place them on a cookie sheet for support.
