Mom's Sunday Pancakes

My mother has made these pancakes, from a 1962 cookbook, most Sunday mornings for my brothers and me, then for all of our kids. IMHO, this is the bar for all other pancake recipes.
Ingredients:
2 cups flour (i use unbleached)
5 teaspoons baking powder
1 teaspoon salt
3 tablespoons sugar
2 eggs
2 cups milk
1/3 cup canola oil
1 teaspoon vanilla
Directions:
1. Beat eggs. Add milk.
2. Fold wet ingredients into dry ingredients until blended.
3. Add oil.
4. I always let the batter rest for 20ish minutes to give the baking powder time to react.
