Mom's Sugar and Spice Cutouts

My mom has passed this recipe down to me and it is always a cookie that is requested at the Christmas holidays especially. I've never had these cookies not turn out well. Quantity really depends on the size of cookie cutters used but for ease of posting I based this on an approx. 2 cutter. CHILL TIME is required for a minimum of 2 hours and up to overnight (not included in the time here on Zaar). Hope you enjoy them as much as my family does.
Ingredients:
2/3 cup unsalted butter (no substitutions)
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
4 cups cake flour, sifted
1/2 teaspoon salt
2 1/2 teaspoons baking powder
1/2 teaspoon ginger
1 teaspoon nutmeg
1 1/2 teaspoons cinnamon
4 teaspoons milk (low-fat is fine)
Directions:
1. Cream together the butter and sugar and beat until light and fluffy.
2. Add eggs and vanilla to the butter mixture and mix well.
3. Sift together dry ingredients and spices. Add this to the creamed mixture alternately with the milk until it forms a stiff dough.
4. Form into a log and wrap in wax paper. Chill for a minimum of 2 hours to overnight.
5. Dust rolling mat with a bit of cake flour and take a portion of the dough log and roll out to 1/4 inch thickness. Using the cookie cutter design of your choice, cut out cookies and place on a lightly greased (or use parchment paper) baking tray.
6. Bake at 375F for 8-10 minutes. Allow to cool 5 minutes before removing to a cooling rack to cool completely.
7. Optional - lightly frost or ice the cookies to your liking. I also love these cookies just as is so the spices shine through.
