Mom's Roasted Pumpkin Seeds

The other 65 pumpkin seeds recipes were similar but not exactly how mom does it. My daughter swears these are the best she ever tasted. The main differences from others were boiling in salt water first and roasting at a low temp of 250.
Ingredients:
1 quart water
2 tablespoons salt
2 cups pumpkin seeds
1 tablespoon vegetable oil
Directions:
1. Preheat oven to 250.
2. Pick through seeds, remove stringy fibers.
3. Bring water and salt to boil, add seeds, boil 10 minutes.
4. Drain, spread on paper towels, pat dry.
5. Place seeds in bowl with oil and toss.
6. Spread evenly on cookie sheet.
7. Roast in oven 30-40 minutes, stirring every 10 minutes, or until crisp.
