Mom's Ratatouille

This is my Mom's Ratatouille recipe that she has made for years. It took me about 23 years to like it, but now I love it. We decided a big bowl of vegetables would be scary for kids, but it is delicious!
Ingredients:
1 tablespoon olive oil
1 medium onion, diced
3 garlic cloves, minced
1 large eggplant, sliced
1 (8 ounce) white button mushrooms, sliced
5 -7 squash, sliced
1 (22 ounce) can diced tomatoes
2 tablespoons sugar
salt
fresh ground black pepper
rice, to serve
Directions:
1. Add oil, garlic, and onion to large pot. Cook until onion becomes almost translucent.
2. Add sliced eggplant, mushrooms, and squash and cook for another 3 minutes.
3. Add diced tomatoes, and allow to cook until everything is tender, about 20 minutes.
4. Add sugar, salt, and pepper to taste.
5. Prepare rice to serve under the Ratatouille, and enjoy!
