This recipe is a little more work than most potato salad recipes, but it is so worth the extra effort. My mom came across this recipe years ago. It was an instant hit with our family, and now is a favorite with my family and friends. Read more . I have added a few of my own twists over the years and perfected it to what my husband calls the best potato salad he has ever had.
Ingredients:
sauce
1/2 c. sugar
1/2 tsp. salt
1 tbsp. corn starch
1/4 c. vinegar
1 tsp. dry mustard
2 beaten eggs
3/4 c. water
salad
4 c. cooked, diced potatoes
5 hard boiled eggs, peeled and diced
1 c. mayonaisse
1/2 onion, minced
10-20 green olives, minced
1/8 cup dill relish
Directions:
1. Combine all sauce ingredients. Cook until thick. Cool completely. Pour over cooked, diced potatoes. Add chopped hard-boiled eggs, onions, olives and relish. Stir in 1 C. of Mayonnaise or salad dressing. Chill and serve.
2. Note: I sometimes add a little regular mustard to give it a little more tart flavor, as the recipe can sometimes taste a little too sweet. The mustard really makes a difference. I also sprinkle a little Salad Supreme on top, which gives it a little kick.
