This is my mom's potato salad. My family loves this potato salad and have it every summer. This is very simple to make and taste best when allowed to set overnight but can be made a little as a hour ahead of serving time. My mom used to add onions to this potato salad but she said when my us kids never liked it so feel free to add it you want. You can also add dried dill weed if you want sprinkled to taste.
Ingredients:
1 cup mayonnaise (or more to taste)
1 teaspoon mustard
bacon bits, sprinkled to taste
salad supreme dry seasoning, sprinkled to taste
salt, sprinkled to taste
pepper, sprinkled to taste
onion salt, sprinkled to taste (opt, i have also used it)
3 hard-boiled eggs, diced
6 -8 potatoes, peeled and cut into chunks and boiled (medium-large size, i like bite size)
Directions:
1. Mix together the mayonnaise, mustard, bacon bits and seasonings to taste.
2. Add cooled eggs and potatoes mix.
3. Sprinkle the top with salad supreme.
4. Refrigerate overnight after mixing.
