This is my favorite potato salad. I amazed that I didn't see anything like it when I was looking on the Zaar so I thought I would share. The original recipe is rather dry (that is the way my dad likes it) but all you need to do is add more dressing and it is still yummy.
Ingredients:
6 -8 medium potatoes, boiled
1 small onion
4 -5 medium radishes
1 stalk celery
1 cup miracle whip
1 tablespoon yellow mustard
1/8 ounce equal sugar substitute, 2 packets
6 hard-boiled eggs
Directions:
1. While you cook the potatoes and eggs chop all the veggies up to whatever size you like them. We usually got them about 1/4 inch peices.
2. Cool the eggs and potatoes.
3. Chop potatoes into 1 inch pieces.
4. Chop all but 2 eggs into 1/2 inch pieces.
5. You can always make them bigger or smaller of course.
6. Mix all the chopped ingredients in a 3 qt bowl.
7. Mix the Miracle Whip, mustard and equal (can sub sugar) together well.
8. Mix the dressing and veggies all together.
9. Slice the last 2 eggs and arrange on top for garnish.
10. Tastes best if you mix up and put it int he fridge for a couple hours to let the flavors mix.
