This is my Husbands mothers Recipe. She used to make this for his birthday every year. It takes a long time to make but is well worth the effort. But I do understand why she only made this once a year. If you have the time and want to hear the praises then take the extra effort and try this Recipe. but be warned it is an all day project. And it does freeze well.
Ingredients:
1 small onion, chopped
1 (12 ounce) can tomato paste
2 (29 ounce) cans tomato puree
12 ounces water
2 (12 ounce) cans beer or 24 ounces red wine
1 1/4 teaspoons parsley
1 -4 garlic clove, minced
1 1/4 teaspoons salt
1 teaspoon pepper
1/2 cup sugar
2 lbs ground beef, browned and drained
9 -12 lasagna noodles, cooked according to package
1 lb ricotta cheese or 1 lb cottage cheese
1 teaspoon parsley
1 teaspoon oregano
3/4 cup parmesan cheese, grated
1 -1 1/2 cup mozzarella cheese (i prefer slicing this cheese)
1 -1 1/2 cup monterey jack cheese
Directions:
1. First in a large pot saute onion and garlic in 2 tablespoons of olive oil until tender.
2. Add:.
3. Tomato paste, tomato puree, water, beer, parsley, salt pepper and sugar.
4. Simmer 6+ hours uncovered.
5. Cook your ground beef, I like to add extra garlic, onions and Italian seasoning while cooking
6. Boil your noodles.
7. In a medium size bowl make your cheese mix, the ricotta(or cottage cheese), parsley, and oregano.
8. In a 13X9 inch pan.
9. Layer ingredients as follows.
10. 1 sauce.
11. 2 single layer of noodles.
12. 3 Mixture.
13. 4 Cheeses.
14. Repeat until pan is full makes 3 to 4 layers.
15. Top with Sauce and more cheese.
16. Cover with foil and bake 350 for 45mins to 1 hour.
17. Let stand for 10 to 15 mins.
