Mom's Fried Yellow Squash

Fried yellow squash
Ingredients:
4 -5 yellow squash
2 eggs
flour
garlic
pepper
salt
cooking oil
Directions:
1. Dice squash (small cubes a little larger than sugar cubes).
2. Add eggs and stir until all the squash is coated with egg.
3. Next, add flour.
4. Just add flour until squash is well coated with an egg and flour batter.
5. In large skillet, fry squash.
6. I usually add pepper, salt, and garlic while my squash is frying.
7. Hint: If fixing a large amount I use 2 skillets so the squash fries up a bit crispier.
