Mom's Exotic Chicken Salad

A different take on chicken salad. Courtesy of one of the greatest women on earth...my mom! :)
Ingredients:
4 cups cooked chicken, diced
1 cup celery, sliced
1 lb seedless grapes, halved
1 cup sliced water chestnuts
1 cup slivered almonds, toasted
1 cup mayonnaise
1 tablespoon soy sauce
1 teaspoon curry powder
1 tablespoon lemon juice
2 cups pineapple tidbits
Directions:
1. In a large bowl, combine salad ingredients (chicken through almonds.).
2. In a small bowl, mix dressing ingredients.
3. Pour dressing over salad ingredients and mix well.
4. Garnish with pineapple tidbits.
5. Serve plain, as sandwiches, or on top of a bed of lettuce.
