Mom's Crock Pot Potato Soup

Ingredients:
6 potatoes, cut into small chunks
1 onion, chopped
1 carrot, chopped
2 stalks celery, chopped
5 cup water
4 chicken bouillon cubes
2 tbsp parsley, finely chopped
1/3 cup unsalted butter
12 oz nonfat evaporated milk
Directions:
1. Put all ingredients except for evaporated milk in a crock pot. Cover and cook on low 10-12 hours or on high 3-4 hours. Stir in evaporated milk 1/2 hour before serving.
2. Nice to add: 1 cup grated cheddar cheese and/or crisp crumbled bacon.
3. If you like thick soup, thicken with cornstarch and water mixture.
