My Mom created this recipe when I was a child, and I tweaked it a bit to my liking. It's the only coleslaw I will eat.
Ingredients:
1-1/2 cups shredded cabbage
2 tablespoons shredded carrot
1 tablespoon chopped sweet red pepper
1 tablespoon chopped green pepper
2 tablespoons plus 1 teaspoon reduced-fat sour cream
1-1/2 teaspoons reduced-fat mayonnaise
1 teaspoon red wine vinegar
1/2 teaspoon sugar
1/4 teaspoon celery seed
1/4 teaspoon salt
Directions:
1. In a large bowl, combine the cabbage, carrots and peppers. In a small bowl, whisk the sour cream, mayonnaise, vinegar, sugar, celery seed and salt. Pour over cabbage mixture; toss to coat. Chill until serving. Yield: 2 servings.
