Moms Chicken Wings

My Mom made this when we were growing up and it's my favourite to this day. When I say it serves 6, that is only true if I'm not around because they're mine! All mine! Serve with rice and a side salad.
Ingredients:
3 lbs chicken wings (preferably organic), split and tips removed
1 c dark soy sauce (i'd suggest the low sodium if you don't want it too salty)
1 c muscovado brown sugar (the really dark kind)
4-6 cloves garlic, minced
4 t ketchup (i'm guessing here- otherwise i'd say a very liberal squeeze)
a few drops sesame oil
a few drops chili oil or hot sauce
2 green onions (spring onions/shallots) finely sliced
2 t toasted sesame seeds
Directions:
1. Preheat oven to 350F
2. Rinse and dry chicken wings, set aside.
3. Combine soy sauce, sugar, garlic, ketchup, oil, & hot sauce and mix until sugar lumps are gone.
4. Spray a rectangular casserole dish with nonstick spray, and add chicken, skin side down.
5. Pour sauce over chicken, and bake for 60-90 minutes. Baste every 30 minutes or so.
6. Wings are done when they are dark brown and the sugar in the sauce starts caramelizing.
7. Sprinkle with onions and sesame seeds, serve hot over rice with lots of sauce, and eat!!
