Moms Chicken Salad With Lemon Vinaigrette

This is a really refreshing salad to have for a ladies luncheon in the summertime! Ok, so you can have it just for you and your family any old time!
Ingredients:
2 to 4 cups water for poaching chicken
juice of 2 lemons (divided)
1 teaspoon dried tarragon
1 pound chicken breasts (fillets)
zest of 1 lemon
leaf lettuce
1/4 cup vegetable oil
1/2 teaspoon sugar
1/8 teaspoon ground nutmeg
1/2 pound seedless green grapes, halved
1/2 pound seedless red grapes
2 ounces feta cheese, crumbled
Directions:
1. In a medium saucepan, bring water, juice of 1 lemon and 1/2 teaspoon tarragon to a boil over medium heat.
2. Add chicken, cover and simmer until chicken is
3. done (about 10 minutes.)
4. Remove chicken from skillet, cool 15 minutes, cover and refrigerate until chilled.
5. Combine remaining lemon juice, and zest, remaining tarragon, oil, sugar and nuteg in a small bowl; whisk until blended.
6. Cover and refrigerate for several hours.
7. To serve, arrange chilled chicken and grapes over bed of lettuce. Top with vinaigrette and cheese.
8. Yield: 4 servings
9. I’d throw in a little parsley!
