Mom's Chicken Chimichangas

Delicious! The cream cheese melts over the chicken & chilies inside. Prep time includes frying.
Ingredients:
8 ounces cooked chicken, cubed
4 ounces green onions, chopped
8 ounces fresh tomatoes, chopped
1 (3 7/8 ounce) can sliced ripe olives
2 (4 ounce) cans diced green chilies
1/4 cup fresh cilantro, chopped
1 lime
8 ounces cream cheese
8 medium flour tortillas
4 tablespoons olive oil, divided
Directions:
1. Combine chicken, green onion, tomatoes, olives, chilies and cilantro. Sprinkle with juice from lime.
2. Slightly warm the tortillas and then the cream cheese in microwave.
3. Place 1 oz slice of cream cheese in center of each tortilla, spoon 1/8th of the chicken mixture over the cream cheese into center of tortilla. Wrap like a burrito, folding ends shut. Optional: use a toothpick to hold tortilla shut.
4. Fry over medium high heat in a little oil, until lightly brown and warm in center. Continue to add oil to pan as needed.
