This is very rich, something different to have once in a while.
Ingredients:
1/4 cup butter
1 tablespoon minced onion
1 cup uncooked rice
2 cups chicken broth
Directions:
1. Melt butter in a heavy skillet. Add rice and onion. Stir constantly, browning the rice until golden brown. Bring broth to a boil in a saucepan, add to the rice and cover. Cook over LOW heat 40-50 minutes until rice is cooked, water may be added if needed.
