Mom's Best Meat Loaf

Basic and hearty. Good served directly from oven or cold in sandwiches.
Ingredients:
1 medium onion, minced
6 slices bacon, diced
2 garlic cloves, minced
1 1/2 lbs lean ground beef
2 eggs, lightly beaten
4 tablespoons bottled horseradish
1/2 cup old fashioned oats
1/3 cup grated parmesan cheese
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon celery seed
1 teaspoon dill seed
1 teaspoon dried thyme
1/3 cup tomato sauce or 1/3 cup ketchup
2 tablespoons brown sugar, packed
Directions:
1. Saute the onion with bacon and garlic until golden.
2. With hands gently combine meat, bacon-garlic-onion mixture, eggs, horseradish, oats, parmesan cheese, and spices. Knead gently but thoughtly until mixture is very light and fluffy.
3. Heat oven to 350.
4. Pack the mixture into 2 quart rectangular glass loaf pan, leveling the top gently.
5. Spoon tomato sauce or ketchup over the top of the loaf and sprinkle with the brown sugar.
6. Bake loaf for 1 1/2 hours. Let cool 30 minutes before slicing.
7. You can also cool completely, cover tightly in plastic wrap, chill overnight. Using thin knife, slice the loaf into thin slices for sandwiches.
