Moms Apricot Oatmeal Cookies

These are really good. You can freeze the dough ahead of time for up to 2 weeks. Just roll into a log and wrap well in wax paper. Slice off what you need.
Ingredients:
1/2 cup all-purpose flour
1 cup oat flour
1 teaspoon salt
1 teaspoon baking soda
3/4 cup sugar
3/4 cup brown sugar
1/2 cup butter
1/2 cup sugar-free applesauce
2 eggs
1 tablespoon vanilla extract
3 1/2 cups rolled oats
1 1/2 cups chopped apricots
1 cup chopped pecans (optional)
Directions:
1. Mix all the ingredients together.
2. Bake in a 350 oven on an ungreased cookie tray for 12 to 15 minute DO NOT OVERCOOK. Remove when they are light brown on the bottom.
