Moms Age-old Always Good Sweet Chicken Salad

This recipe has withstood the test of time, being served in my family for as long as I can remember (and that's a long, long time...). I know many of you won't be able to find macaroni rings, so you can use elbow macaroni instead - but if you can find the rings, I swear they are worth the purchase - they are tiny little flat rings that won't absorb the salad dressing as it sits, keeping the salad nice and moist. Read more . It's about the only recipe I use Miracle Whip in (I much prefer mayonaisse, but it doesn't work for this recipe). Using a store-prepared rotisserie chicken really cuts down on the prep time, and adds a lot of flavor, too, but you can cook up some chicken yourself if you prefer.
Ingredients:
1/2 cup dry creamettes macaroni rings, cooked, drained and cooled
1 rotisserie chicken (or your own leftover chicken meat), cut into bite size pieces
3 stalks celery, sliced thinly
4 hard-boiled eggs, peeled and diced
1 cup miracle whip salad dressing (this is one recipe that mayonaisse just doesn't work as well as miracle whip
2 tablespoons sugar
salt and pepper, to your taste (i like to add 1/4 teaspoon mccormick’s montreal chicken spice)
1 teaspoon prepared yellow mustard (not a spicy mustard - just plain old yellow mustard)
1 cup green or red seedless grapes, if desired
Directions:
1. In large bowl, mix together cooked macaroni rings with chicken, celery, and eggs.
2. In separate bowl, combine Miracle Whip, sugar, seasinings and mustard, blending well.
3. Pour this over the pasta mixture and gently stir to coat.
4. Adjust seasonings to your taste (NOTE - this is meant to be quite sweet, so don't over-season)
5. Add grapes, cut in half, if desired.
