Mom use to make this 3 Bean Salad all the time. I love it to this day. I know... there are 4 types of beans, mom wasn't the math whiz in the family.
Ingredients:
1 can bean salad, with liquid
1 can garbonzo beans, rinsed
1 can green beans, rinsed
1 can wax beans, rinsed
1 can kidney beans, rinsed
2 tbsp. onion, chopped (i like to use red or walla walla)
2/3 cup vinegar
1/2 cup water
1/3 cup oil
1/4-1/2 cup sugar (to taste really)
salt and pepper, to taste
Directions:
1. Making the marinade: In a sauce pan, combine water, vinegar, sugar, salt and pepper, and onion. Stirring to disolve sugar and prevent scorching, bring to a boil. Remove from heat. Safety tip, don't put your face right over pot and inhale while boiling. That vinegar steam will kick your butt!)
2. In large sealable bowl, container, add all canned items. Pour in marinade, stir, cover and refrigerate overnight.
3. Great for everyday or potlucks or picnics. Especially in summer when a cool refreshing salad really hits the spot and won't spoil sitting out on that picnic table.
